I think if you bracket your exposures and combine them later, you can even out the highlights with the dark areas. For example, you could preserve the detail of the Jesus on the crucifix and the colours in the stained glass windows.

Very nice. I wouldn't worry about straightening the verticals beyond the crop you mentioned and correcting a very slightly tilted horizon. The exposure looks good to me except for the figure of Christ. Perhaps that could be locally corrected. Having it as the brightest area of the photo is a good idea, though.
As for tripods, I have several. My favorite (used maybe 98% of the time) is an ancient Tiltall. The same fine design may still be available, but made overseas. I don't know about their quality. The classic American-made version should still show up on ebay under Tiltall, Leitz, or Star D. A Leitz name tag makes it more valuable, but no better. The Star D version is as good as any. Mine has seen plenty of use for 35 years. The Tiltall weighs about 6 pounds and extends up to maybe 6 feet. It includes a decent three-axis head.
